Keto Recipe: Maple Pecan Bacon Brie Cups

Updated: Dec 26, 2019

Yes, it's a mouthful but how else would you describe these appetizers? This is the perfect balance of sweet and salty, crispy and creamy, all for less than one carb per piece. You and your guests will love these. Best of all, they are served at room temp, so no stressing about how to keep them warm. These can be prepped ahead of time and baked just before your guests arrive. Enjoy!

Keto Maple Pecan Bacon Brie Cups

  • 12oz package of sliced bacon (nitrate free)

  • 3oz brie cheese (or Fontina)

  • 16 raw pecan halves

  • 3-4T sugar free maple syrup (we use ChocZero)

1. Preheat oven to 400°. Cut bacon into thirds. Place 2 pieces in each cup of a mini muffin pan and press down to form a cup. Bake 12-15, until cooked though and edges are crisp.

2. Remove from oven and turn temperature down to 350°. Drain the excess fat from the bacon.

3. Cut brie into equal size pieces (ours made 16) and place in the bacon cup. Press down slightly to make an indent for the pecan to rest in.

4. Place one pecan half in each cup. Drizzle about 1/2 tsp of maple syrup over the top.

5. Bake for 5-6 minutes, until cheese melts. Let them cool for a few minutes before plating so the cups hold their shape. Makes 16.

NOTE: To make ahead, prep and bake the bacon cups. Add remaining ingredients, cover and refrigerate. Bake for the final 5-6 just before your guests arrive.
