Eggs are the perfect Keto food - a good source of protein and almost no carbs. Now, we keep a dozen hard-boiled eggs in the fridge at all times so we can add them to salads, have a quick snack or make this yummy egg salad. Sometimes we make lettuce boats or use keto crackers to scoop it up, other times we simply use a spoon, depends on our mood. Egg salad is a great option when doing an egg fast too.
Egg to Fat Ratio 2:1
Keto Basic Egg Salad
2 eggs
1T mayonnaise
1tsp -1T mustard (depends on your taste)
s&p to taste
1. Hard-boil eggs, 8-9 minutes in boiling water then cool completely.
2. Peel eggs and chop or use an egg slicer (slice 3 times to get uniform diced eggs)
3. In a bowl combine diced eggs, mayo, mustard, s&p. Enjoy!
TIP: If your not on an egg fast, try adding 1/2 diced avocado or 1T of bacon bits into the mix. Maybe a dash of sriracha, wasabi or buffalo sauce is more your taste. Be creative!
