Keto Recipe: Cauliflower Mac-n-Chz

Who doesn't love macaroni and cheese? Our family loves it - homemade, baked or stove-top. Since switching to Keto we've swapped the macaroni for cauliflower (or broccoli). Try it you'll like it. You can easily double this recipe to serve a crowd. It's our go-to dish to bring to potlucks (scroll down for pics). Enjoy!


Keto Cauliflower Mac-n-Chz

  • 1 head cauliflower, cut into florets

  • 1/4c butter

  • 1c mild or med cheddar, shredded

  • 1/2c sharp cheddar, shredded

  • 1c heavy cream

  • 1 tsp salt

  • dash of pepper

  • dash of garlic powder

Topping

  • 1/2c shredded cheddar (mild or medium or cheddar/jack blend)

  • 2-3T bacon bits (optional)

1. Preheat oven to 375°. Steam the cauliflower florets for 10 minutes, until slightly tender. Drain and set aside.

2. While cauliflower is steaming, melt butter in saucepan on medium heat. add cream and stir to combine. Once it's bubbling, add cheese, half cup at a time and stir continuously. Add seasonings and simmer for 5 minutes to allow it to thicken, stirring frequently.

3. Spread drained cauliflower in an 8x8 baking dish. Pour cheese sauce over cauliflower and stir to make sure it's well coated.

4. Sprinkle cheese and bacon on top. Bake uncovered for 15-20 or until top browns.

NOTE: For an even creamier sauce add 1/2c Velveeta instead of 1/2c sharp cheddar.
