Keto Recipe: Cauliflower Risotto

Does Keto have you missing rice? Try this easy side dish to feed your rice cravings. This dish comes together in less than 15 minutes, so it's great for any busy night. Pro tip: we buy frozen riced cauliflower to save time. Plus, you can change it up with blends like cauliflower and broccoli, Cauliflower Medley with onions, carrots and peas, or Cauliflower Risotto Medley with mushroom and asparagus. Enjoy!

Keto Cauliflower Risotto

  • 1T butter

  • 12oz bag frozen riced cauliflower, thawed (plain or blend)

  • 1/4c heavy whipping cream

  • 1/4 grated Parmesan

  • 1/4c shredded cheddar

  • s&p to taste

1. Rinse thawed cauliflower and drain thoroughly. Set aside.

2. Melt butter in skillet on medium-high, add cauliflower. Cook until heated through and any excess water has evaporated, stirring frequently.

3. Reduce heat to medium-low and add remaining ingredients. Stir until cheese has melted creating a creamy sauce. Serves 4.






NOTE: Most cauliflower risotto recipes call for cream cheese, but we've found it overpowers the dish so we add extra shredded cheese for a nice mild flavor that compliments the rest of your dinner.
