Keto Cauliflower Risotto
1T butter
12oz bag frozen riced cauliflower, thawed (plain or blend)
1/4c heavy whipping cream
1/4 grated Parmesan
1/4c shredded cheddar
s&p to taste
1. Rinse thawed cauliflower and drain thoroughly. Set aside.
2. Melt butter in skillet on medium-high, add cauliflower. Cook until heated through and any excess water has evaporated, stirring frequently.
3. Reduce heat to medium-low and add remaining ingredients. Stir until cheese has melted creating a creamy sauce. Serves 4.
NOTE: Most cauliflower risotto recipes call for cream cheese, but we've found it overpowers the dish so we add extra shredded cheese for a nice mild flavor that compliments the rest of your dinner.
