Creamed spinach, you either love it or hate it. Our house is divided, hence, this recipe only makes three to four servings but you can easily double or triple it. You'll also notice it's not soupy like some recipes either. We like it with a lot less liquid and plenty of flavor. Let us know what you think in the comments below.
Keto Creamed Spinach
2T butter
10oz package chopped spinach, thawed and drained
1 tsp dried minced onion
1T minced garlic
1/8 tsp ground nutmeg (check out these cute mini measuring spoons)
1 oz cream cheese
1/2c heavy whipping cream
s & p to taste
2T shredded Parmesan (optional topping)
1. In a small saucepan, melt butter on medium-high heat. Add spinach and seasonings. Heat through, stirring constantly.
2. Add cream cheese and heavy cream, stir until combined. Serve, top with Parmesan, if desired. Serves 3-4.
Just about any other dark greens work well with this recipe. Try collard greens or kale for a change.
