Call it what you want - Dakota Chicken, Alice Springs Chicken or Ranch Chicken - it's all good! We love one skillet dinners and this can easily be doubled for large families or company. The mushrooms are optional, as you can see from the pictures below.
Creamy Chicken Bacon Skillet
2 pounds chicken breast, cut into one inch cubes
3T Dijon mustard
3T oil (coconut, avocado or olive)
1 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
1. Marinate the cubed chicken in a mixture of Dijon, garlic and s&p for an hour or more before cooking.
12oz bacon, cut into quarters before cooking
2c sliced mushrooms (optional)
1/2c heavy cream*
1 tsp garlic powder
1c shredded Jack/cheddar blend
salt & pepper to taste
2. In a large skillet on medium high heat, cook the bacon quarters and remove from pan. Set aside.
3. In the same pan, reduce heat to medium, add mushrooms and chicken then cook completely.
4. Add the bacon back into pan along with heavy cream and cheese, stir until combined. Serve immediately.
*You may substitute coconut milk or half & half for the heavy cream.
