We discovered this combo on one of our egg fast adventures. It combines egg waffle bread with mashed avocado. A perfect meal during a dairy-free egg fast. Surprisingly, the mayo masks the egg flavor. You could even add seasonings like garlic or onion powder. For an egg fast, each serving counts as 2 eggs and 2 fats. Enjoy!
Egg to Fat Ratio 2:2
Keto Avocado Toast
3 slices of egg waffle bread
1 ripe avocado
dash of pink salt OR 1T "everything but the bagel seasoning" (optional)
Egg Waffle Bread
2 eggs
2T mayo
s&p to taste
1. Blend egg waffle bread ingredients in a bullet blender (we use a Ninja Blender) or vigorously by hand.
2. Pour 1/3 of the batter into mini waffle iron (we use a Dash Mini Maker). Set aside.
3. Mash avocado in a small bowl then spread onto each waffle.
4. Top with pink salt or everything but the bagel seasoning. Makes 3 pieces.
