Do you miss potatoes now that you're eating Keto? Us too, until we tried fried radishes. First of all, none of us liked them raw - that bite! However, when you cook them it mellows their flavor considerably and they absorb whatever seasonings you cook them with. Bonus, they're super cheap. Enjoy!
Keto Fried Radishes
4 bunches radishes, stems removed and washed
4T butter or ghee or bacon grease
1 tsp dried oregano
1 tsp garlic powder
1 tsp salt
dash of black pepper
Optional
1/4c grated Parmesan
1. In a large skillet, on medium-low heat, melt butter, ghee or bacon grease. Meanwhile, quarter the washed radishes (you could buy them already washed and sliced, see first picture below).
2. Add radishes to pan and season. Cover for 10-15 minutes, stirring occasionally.
3. Once they are fork tender, sprinkle with cheese if desired and serve.
TIP: Buy one bunch for each person you're serving. There are only about 8-10 radishes per bunch.
Loaded Radishes
Add shredded cheddar cheese, bacon bits and sour cream - we promise you'll think its loaded potatoes (see middle picture above). Even our kids like this dish!
Got leftovers? Add them to your scrambled eggs the next morning (see third picture above)!
