Yes, we've already posted a recipe for brownies but these are different. First of all, there's three different chocolates in this one. Plus, we wanted something fudgy and dense made with no almond flour. After several experiments - success! Of course, the nuts are optional and so are toppings, but the possibilities are endless. Enjoy!
Keto Fudge Brownies
1/2c butter
2oz chocolate, broken into pieces (we use 2/3 bar Lily's milk or dark)
1/4c cocoa powder (we use Hershey's)
3 large eggs
1 tsp vanilla extract (we use Grandma's Pure Vanilla)
1/4c fine coconut flour (we use Republic of Coconut)
1/2c sugar-free chocolate baking chips (we use Let's Bake Believe milk chocolate)
1/2c chopped nuts, pecan/walnut/macadamia
1. Preheat oven to 350°. In a large mixing bowl, add butter and chocolate bar, microwave at 30 second intervals until melted, then stir to combine.
2. Add cocoa powder and sweetener, stir until well incorporated.
3. Add remaining ingredients and stir to combine.
4. Pour into a parchment lined or lightly greased 8x8 baking dish. Bake for 20 minutes, then check for doneness with a toothpick every 2-3 minutes. It should not take more than 30 minutes. Do not over bake, center will still be slightly underdone. Cool completely before cutting. Makes16 squares.
