Rocky Road Fat Bombs

We're always looking for ways to get in more healthy fats and a little treat at the same time so fat bombs are perfect. These can be made with a vanilla or chocolate base, but we prefer the chocolate. For the vanilla just omit the cocoa powder. Scroll down for pictures of both.

Keto Rocky Road Fat Bombs

  • 1-2T coconut oil (depends on how much fat you want)

  • 1/2T cocoa powder (we use Hershey's)

  • 4oz mascarpone (or cream cheese*)

  • 1/4c almond butter

  • 1/4c powdered sweetener

  • 1/2 tsp vanilla extract

  • 1/4c sf chocolate chips (we use Lily's milk chocolate baking chips)

  • 2T chopped pecans

  • 3-4 sf marshmallows (cut each one into 9-12 mini pieces) we use MaxMallow)

  • dash of salt

We keep a stash of fat bombs in our freezer at all times!

1. Melt the coconut oil and stir in the cocoa powder until smooth.

2. Combine remaining ingredients (best at room temp). Drop into cookie sized mounds onto lined cookie sheet or into silicone molds and freeze. Makes 20-24 mini bars. Enjoy!


*You can substitute cream cheese for the mascarpone but it will change the flavor, making it tangy. Mascarpone has a mild, buttery flavor that's perfect for these treats.
