Keto Recipe: Gluten-Free Waffles

One of our family's favorite breakfast items would have to be waffles, followed closely by pancakes. Now, we have a gluten-free Keto friendly version to share with you. These are great to make ahead and freeze, just pop into the toaster to reheat. Check out our gluten-free bread too. Enjoy!


Keto Gluten-Free Waffles

1. Combine dry ingredients in a small mixing bowl and set set aside.

2. In a medium mixing bowl, beat eggs until fluffy. Stream in the melted butter until fully incorporated.

3. Add vinegar, milk and vanilla, stir to combine.

4. Slowly add in the dry ingredients, stir until combined, careful not to over mix. Let the batter rest for 5 minutes while prepping the waffle iron.

5. Pour 1/4-1/2c of the batter into the hot iron and close. This batter takes a little longer to cook, maybe 1-2 minutes after the indicator light turns off. Depending on the size of your waffle iron, we use the Dash Mini Maker, recipe makes 6 waffles.


NOTE: These waffles are soft, not crispy. However, if you freeze them and reheat them in the toaster they will be crispier.


TIP: Double the recipe for freezer waffles. Once cooked, lay waffles flat on a cookie sheet and freeze for 2 hours. Once frozen, stack waffles and place them in an airtight container in the freezer for up to one month. To reheat, pop in the toaster oven and serve.


Serve with sugar-free maple syrup (we like ChocZero) or your favorite nut butter (we love Legendary Foods - Pecan Pie Almond Butter).
