Keto Recipe: Low-Carb Applesauce

Nothing says fall like the smell of cinnamon and apples simmering away on a brisk day. But keto eaters might be looking for a low-carb substitute. Have you tried chayote squash? It has one-quarter of the carbs of a granny smith apple (24nc vs 6nc). While it may look like a pear, there is no sweetness and actually has a very bland flavor. Never fear, after we add some seasoning and spices, even the non-keto eaters in your family won't be able to tell the difference. Keto Applesauce

  • 2 chayote, seeded and grated (see picture below)

  • 3/4c water

  • 2T lemon juice (if you don't have fresh lemon juice use 4 packets of True Lemon)

  • 1T butter

  • 1/4-1/2c sugar substitute (we use brown sugar Swerve)

  • 1 tsp pumpkin or apple spice

  • 1 tsp cinnamon

  • 1/16 tsp salt

  • 1/16 tsp ground cloves (check out these cute mini measuring spoons)

1. In a saucepan on medium heat, boil grated chayote, water, lemon juice and butter until softened and half of the water has evaporated, about 15-20 minutes.

2. Once softened, add remaining ingredients and simmer on low heat for 15 minutes. The sauce will thicken nicely as the remaining water evaporates.

3. Remove from heat and blend with an immersion blender then cool. Refrigerate for up to one week. Yield 1 1/2 cups. Enjoy!
