Keto Recipe: Apple Substitute

One of the things we miss the most on Keto is fruit, especially apples. You too? Give this a try - chayote squash. It has a similar texture to apples or pears but with almost no flavor. Once cooked properly, it tastes and feels just like cooked granny smith apples. There are so many uses for it too. This recipe is for our basic prep and cooking technique using just one piece of fruit, double or triple recipe depending on what your making. See below for additional recipe links.

Chayote 'Apple' Pie Filling

  • 1T butter

  • 1 chayote, peeled, seed removed and diced

  • 1/2c water

  • 1-2T brown sugar substitute (we use Swerve)

  • 1T lemon juice (if you don't have fresh lemon juice use 2 packets of True Lemon)

  • 1 tsp ground cinnamon or pumpkin pie spice

  • dash of salt

  • 1/4c chopped nuts (optional)


1. In a saucepan on medium heat, boil chayote and water until softened and most of the water has evaporated, about 15-20 minutes.

2. Once softened, add remaining ingredients. The sauce will thicken nicely in just a few minutes.

3. Remove from heat and add nuts (optional). The filling is ready to be baked into a cobbler or pie, used as a muffin topper or poured over ice cream. Yield 1 1/2 cups. Enjoy!
