Keto Mashed Turnips
4-5 small turnips, diced (smaller ones are less fibrous and have a milder flavor)
1/2c butter
1/4c heavy cream
s&p to taste
Optional Add-ins
1 tsp garlic powder and 1T dried parsley OR
1/4-1/2c shredded cheese (we like medium or sharp cheddar)
1. In a large steamer pot, bring water to a boil in the bottom and place the diced turnips in the steamer basket. Cover and boil until fork tender, about 20 minutes.
2. Set steamer basket aside and discard water. Pour turnips into the now empty pot and return to low heat.
3. Use a potato masher to mash the turnips, how much is up to you. We like ours chunky but if you prefer a smoother texture, use an electric beater or immersion blender.
4. Remove from heat, add remaining ingredients and stir. Serves 4.
