These spinach and cheese balls make the perfect side dish or appetizer. Besides their great herby flavor they have a bread-like texture that everyone is sure to love. You can serve them hot right out of the oven or at room temp, either way they're even better with a little dipping sauce. Try a simple marinara or white garlic sauce. Change up the herbs to give them your own twist. Enjoy!
Three Cheese Spinach Balls
1oz goat cheese*, softened
1/4c Parmesan, grated or shredded
3/4c mozzarella, shredded
2 eggs
10 oz frozen spinach, thawed and drained
1c fine almond flour
1 tsp salt
1/8 tsp black pepper (check out these cute mini measuring spoons)
1/2 tsp Italian seasoning
1/2 garlic powder
1/2 tsp onion powder
dash of ground nutmeg
1. Preheat oven 375°. Combine all ingredients in a medium mixing bowl until thoroughly mixed.
2. Use a medium cookie scoop to make uniform balls. Place about one inch apart on a parchment or silicone lined cookie sheet. Makes 20 balls
3. Bake for 15-18 minutes, until golden brown. Every oven is slightly different, ours were perfect at 17 minutes. Be careful not to over cook them or they will be dry instead of chewy.
*You can substitute cream cheese, or any other soft cheese, for the goat cheese if you would like.
NOTE: we forgot to add a dash of ground nutmeg to ours, they still tasted great but it really adds something extra so don't skip it.
