It might look like peanut brittle but it’s soft and chewy. Made even better with a drizzle of dark chocolate. Bonus points, it's only one carb per piece, try not to eat the whole batch in one sitting.
Keto Caramel Peanut Chews
1/2c butter, salted or unsalted your choice
1/4c brown sugar sub (we use Swerve)
1/4c natural peanut butter (we use Adam's)
2/3c dry roasted peanuts
1 1/2oz dark chocolate (we use Lily's Original)
1 tsp coconut oil
1. Melt butter in saucepan on medium, add brown sugar sub and bring to a boil. Turn off heat and add peanut butter, whisk until smooth.
2. Stir in peanuts then pour onto silicone lined tray or parchment lined pan and spread out into a square or rectangle shape with a silicone spatula to 1/4 inch thickness. Chill for 2 at least hours.
3. Melt chocolate and coconut oil on low or in a double boiler until smooth. Immediately drizzle over the top, chill for 15 minutes to set topping. Cut into triangle or break into pieces.
Makes 16 pieces.
