Calling all coconut lovers! Check out this Keto treat: Coconut Macadamia Bark. Now, macadamia is one of our favorites and it's packed with a lot of healthy fats but you could substitute any nut or seed in this recipe. Hey, you could even mix it up with a combo - pumpkin, sunflower, pecan, walnut, almond, etc. Make it your own. As written, it's about 2 net carbs per piece.
Keto Coconut Macadamia Bark
9oz sugar free dark chocolate (we use Lily's baking chips or original bar)
1/4c coconut oil, solid kind
1c macadamia nuts, rough chopped
1c unsweetened, shredded coconut (we use Edwards & Sons)
1. Melt the chocolate and coconut oil on low heat or in a double boiler.
2. Remove from heat, add macadamias and coconut. Stir until thoroughly combined.
3. Pour mixture into a parchment lined 8x8 pan (9x13 for thinner bark) and refrigerate. Chill for at least 2 hours before cutting into squares. Enjoy!
Makes about 25 squares.
