This dual recipe is easy and only requires four ingredients you most likely already have: butter, heavy whipping cream, granular sweetener and vanilla extract. We’ve adapted this recipe from numerous ones found on Pinterest, but it's closest to mymontanakitchen.com. Keto Caramel Sauce
2T butter (salted or not, your choice)
1c heavy whipping cream
1/4c sweetener (we use Splenda)
1 tsp vanilla or caramel extract (optional but we use Grandma's Pure Vanilla)
Melt butter in a wide saucepan until it browns on medium heat, be careful not to burn it. Add sweetener and heavy whipping cream, stir until combined, don’t whisk. It will be pale. Simmer on medium heat for 15-20 minutes until it reduces by half and darkens. Turn off, add vanilla and stir well. Let it cool before placing in the fridge, as it cools it will thicken even more.
Sugar Free Sweetened Condensed Milk
For sweetened condensed milk there are just a few differences. First, don’t brown the butter just melt it and add the next ingredients. Second, use 2c heavy whipping cream instead of 1c. Third, reduce by 1/3 instead of 1/2. TIP: If you cook it too long it will break or separate. Don’t throw it out! Add another half cup heavy whipping cream and whisk on low until combined.
