Keto Recipe: All-Purpose Dough

There are many ways to make "fathead' dough and it has so many uses - pizza, bagels, dinner rolls, cheese bread, focaccia and pigs in a blanket. This recipe doesn't use any cream cheese and less mozzarella than of most recipes we tried, we're always looking for ways to cut down on dairy. Another difference is we use both almond and coconut flour for better texture. Try it and tell us what you think.


All Purpose Dough

  • 1 1/2c shredded mozzarella cheese

  • 2T butter

  • 3/4c fine almond flour

  • 1T fine coconut flour (we use Republic of Coconut)

  • 2 eggs*

  • 1 tsp baking powder

  • 1/2 tsp salt

Optional Savory Mix-ins

  • 1/4 tsp garlic powder or onion powder (optional)

  • 1/2 tsp Italian seasonings (optional)


TIP: When using this dough for recipes that require more detailed cutting or shaping (cheese danish, tarts shells, etc.) use one whole egg plus one egg yolk instead of two whole eggs. The dough is much easier to work with and less sticky.


1. Preheat oven to 350°. Melt the mozzarella and butter in the microwave at thirty second intervals, stirring in between.

2. Add remaining ingredients and stir until well combined. Next, knead the dough by hand for 2-3 minutes, then let it rest for 5 minutes. It should be tacky but workable, add another 1-2 tablespoons of almond flour, if needed.

3. Place dough ball between two layers of parchment paper and roll to desired thickness. It doesn't have a lot of baking powder so it doesn't rise too much. We like our dough about 1/4" thickness.

4. Place on pizza stone, or silicone lined baking tray. Cook for 10 minutes (depending on thickness), until it starts to brown.


NOTE: For pizza or cheese bread, cook the dough for 7 minutes then add toppings and return to oven to finish cooking. If you've completely cooked the dough before adding topping, use the broiler to cook the toppings without burning the crust.
