You are going to love this variation to our basic egg salad. The avocado makes it so creamy and rich, you will be full - we promise. The recipe calls for 2 eggs, if you're doing 3 just add an extra half tablespoon of mayonnaise. If you're not doing an egg fast, try adding bacon bits into the mix. Enjoy!
Egg to Fat Ratio 2:1
Avocado Egg Salad
2 hard boiled eggs, peeled
1T mayonnaise
1 ripe avocado, peeled, pit removed and mashed
S&P to taste
1. Use an egg slicer (cut 3 times to get uniform diced eggs) or chop with fork.
2. Combine all ingredients in a small mixing bowl and serve immediately.
Like it spice? Add sriracha or buffalo sauce for a little kick.
