One of our favorite meals pre-Keto was Beef Stew filled with potatoes, carrots and celery. Now that we've found the perfect potato substitute we can once again enjoy this hearty stew any cold winter night. Another great thing with this recipe it we use the crock-pot, so it's great for busy weeknights. Just a few minutes of prep in the morning and a delicious dinner will be waiting for you when you get home. Enjoy!
Hearty Keto Beef Stew
2-3 lbs chuck roast, cubed
1 small onion, diced
1/2c carrots, sliced
2 turnips, peeled and diced
3-4 celery stalks, rinsed and sliced
32oz beef broth or water
6oz tomato paste
2T Worcestershire sauce
3 bay leaves
2-3 cloves garlic
1 tsp salt
1/2 tsp black pepper
Set crock-pot on high. Combine all ingredients in crock-pot, stir. Cook for minimum of 6 hours but 8 is better. Remove bay leaves before serving.
TIP: Cut off both ends of the turnip before peeling (use potato peeler) then cut into cubes for even cooking.
