Pre-Keto, Beef Stroganoff over pasta was one our family's favorite meals, like we'd eat it once a week. For months, we hadn't made it, then one day after thinking about the ingredients we decided it would be so easy to ketofy this recipe. Serve over zoodles or low carb pasta for an all in one dish.
Keto Beef Stroganoff
1 lb ground beef or turkey
1c sliced mushrooms
1c diced onions
1 clove garlic, minced
1c beef broth
1/2c sour cream
salt and pepper to taste
1T dried parsley
2 packages Fettuccine (we use Miracle Noodles)
1. In a large frying pan on med-high, sauté ground meat, mushrooms, onions and garlic until meat is no longer pink.
2. Add broth, salt and pepper to taste. Bring to boil then reduce to simmer for 15-20 minutes.
3. Reduce heat to low and add sour cream, stir until combined. Prep noodles and serve, sprinkle with parsley once plated. Enjoy!
This recipe serves 4 but can easily be doubled.
