Here's another one of our old family favorites we've given a keto make-over. Pre-Keto breakfast rice was a staple and a great way to use up leftover rice from the previous night. Just a few ingredients make a tasty and filling dish anytime of day. The only difference is now we use frozen cauliflower rice instead of long grain rice. Cauliflower blends work well too. This dish is great for a transition day on an egg fast. Enjoy!
Keto Breakfast Rice
12oz frozen cauliflower rice (you can rice it from fresh also)
4T butter, divided
2T bacon bits or crumbled bacon
2-4 eggs, beaten
S&P to taste
1. In a large skillet, heat 2T of butter and the bacon bits. Once sizzling, add the cauliflower rice. Stir frequently until heated through.
2. Move the cauliflower rice to one half of the pan. Melt the remaining 2T butter on the empty side. Pour beaten eggs onto the melted butter and scramble (see picture above).
3. About halfway through the cooking, add s&p and mix the eggs into the rice. Continue to stir until eggs are done. Serve immediately. Serves 2 as a meal or 4 as a side dish.
