We've been making a copycat version of Panera's Broccoli Cheese Soup that we found on Pinterest for several years (budgetsavvydiva.com). With just a few adjustments, it's Keto. A little higher is carbs (about 6nc per one cup serving) than some meals, but very filling, perfect for any cold night. This recipe makes about 10 cups, so there will be plenty of leftovers or you can cut it in half. It freezes well, too. Another bonus is that it only takes about 30 minutes from start to finish. Enjoy!
Keto Broccoli Cheese Soup
1 small onion, diced
1/4c butter
1/4c coconut flour (we use Republic of Coconut)
2c heavy whipping cream or Half & Half (we use 1 c of each)
4c chicken stock
2 broccoli crowns, cut and most of the stem removed (about 5-6 cups)
1/2c sliced carrots (optional)
1 tsp salt
1/8 tsp black pepper
1/8 tsp nutmeg
1/8 tsp garlic powder
8oz shredded sharp cheddar (plus a little extra for topping if desired)
bacon bits (optional)
1. In a large pot on medium-high heat, melt butter and add coconut flour. (and bacon bits if you're following the tip at the end of recipe).
2. Once the mixture combines and begins to bubble slowly add the cream, whisking constantly. Add the chicken stock and continue to stir. Bring to low boil.
3. Add remaining ingredients (except cheese) and simmer for 20-30 minutes.
4. Use an immersion blender to purée the soup to the consistency you prefer.
5. Add cheese, one cup at a time, and stir until it has melted completely. Serve immediately. We like ours topped with a little extra cheese and bacon bits. Serves 8-10.
TIP: Want even more bacon flavor? Add a few tablespoons of bacon bits to the rue and a delicious smoky flavor will permeate the whole pot of soup.
