Keto Recipe: Buffalo Sloppy Joes

Buffalo Sloppy Joes. Years ago, we made sloppy joes and none of us cared for it, too sweet, too messy, not sure but we didn’t make them again for a long time. Then, we saw Rachel Ray make Buffalo Turkey Joes and we tried it, everyone really liked it. Later, we found a sloppy joe recipe by Jamie Oliver that was full of veggies. Now, both recipes have been combined and tweaked into keto-friendly Buffalo Sloppy Joes. Pre-keto we served it over rice, now we use Miracle Noodle but zoodles or low carb buns/wraps would be good too. As you can see it’s about 50/50 meat to veg ratio, but even our pickiest eater likes it.

Buffalo Sloppy Joe

  • 1T butter

  • 1 pound ground meat (we use beef but turkey or a mix works too)

  • 1/2 onion, finely chopped (white or yellow)

  • 1 green pepper, finely chopped

  • 1 zucchini, finely chopped

  • 1 carrot, finely chopped

  • 2 celery ribs, finely chopped

  • 2 cloves of garlic

  • 1 tsp dried thyme

  • 1c beef broth

  • 1T Worcestershire sauce

  • 3oz tomato paste

  • 1T cider vinegar

  • 1/4c hot sauce, more/less to taste (we use Frank's Red Hot)

  • S&P to taste

  • 1T keto-friendly sweetener (optional) the original recipes called for honey or brown sugar but we found that we like it without any sweetness

1. Melt the butter in a large skillet on medium heat, add meat and sauté for 2-3 minutes.

2. Add chopped vegetables and herbs. Continue cooking until meat is thoroughly cooked and vegetables soften.

3. Add remaining ingredients and bring to a boil. Simmer on low 5-20 minutes, until sauce thickens nicely (the longer you simmer the more the flavors marry). Serve over keto-friendly rice/pasta (we like Miracle Noodle), zoodles or use low carb buns or tortillas.

TIP: add crumbled blue cheese on top or blue cheese dressing to your bun/wrap.


This recipe serves 4 and can easily be doubled.
