Keto Recipe: Cheese Danish

Our middle daughter loves cheese danishes. It doesn't matter if we're at Starbucks or the Farmer's Market, her first choice is always a fruit and cheese danish. Using our all-purpose dough as the base, we created a keto version that is just as good without all the carbs. Use any fruit you like - strawberry, blackberry, blueberry, raspberry, chayote or peach**. We made one large danish and cut it into 12 pieces but you could make 12 individual squares. We've also made a double layer with no fruit, similar to a bear claw (scroll down for that variation and pics). Enjoy!

Keto Cheese & Fruit Filling

  • 4oz cream cheese, softened

  • 1T sour cream

  • 1 egg yolk

  • 1/3c powdered sweetener (we use Splenda or Lakanto)

  • 1 tsp vanilla extract (we use Grandma's Pure Vanilla)

  • 1/2c chopped fruit (strawberry, blackberry, blueberry, raspberry, apple or peach**)

1. Preheat oven to 350°. On a silicone lined cookie sheet, roll the all-purpose dough into rectangle, about 10"x15". Fold 1/2" of the edge over itself to create a border (see picture below). Set aside.

2. Combine all of the ingredients for the filling, mix until creamy and fruit is breaking up.

3. Pour over uncooked crust. Bake for 13-15 minutes, until edges begin to brown. Let it cool for 30 minutes before cutting. Serves 12.


**NOTE: If your using any fruit other than berries, cook them until soft before mixing in to cheese filling.



Variations

Keto Cheese Danish w/ Almonds

Cheese Danish with Almonds

1. Preheat oven to 350°. On a silicone lined cookie sheet, roll 2/3 of the all-purpose dough into rectangle, about 6" x 10" and set aside.

2. Combine all of the ingredients for the filling and pour over uncooked crust.

3. Roll remaining 1/3 dough into a rectangle, about 6" x 5" and slice into strips. Place the strips over the filling (see picture below). Press the sides together.

4. Bake for 13-15 minutes, until edges begin to brown. Let it cool for 30 minutes before icing. Serves 6-8.


Icing (optional)

  • 1T cream cheese, softened

  • 1T butter, softened

  • 1T heavy whipping cream

  • 2T powdered sweetener (we use Splenda or Lakanto)

  • 1/2 tsp vanilla extract (we use Grandma's Pure Vanilla)

  • 1-2T sliced almonds

1. Blend all ingredients, except nuts, until fully combined and smooth. Drizzle over top of cooled pastry.

2. Sprinkle with nuts. Serve immediately.
