Who needs take-out when you can whip up these chicken patties anytime. We like to pair them with mashed turnips or steamed broccoli. Serve with your choice of Keto-friendly dipping sauces: ranch, bbq, honey mustard or ketchup. You'll notice that our patties are small (slider size, about 3 inches), that's so they cook quickly and evenly. Like it spicy? Add a dash chili powder or red pepper flakes. These could also be made into meatballs for an easy dipping appetizer. Enjoy!
Keto Chicken Patties
2 lbs ground chicken or turkey
2 eggs
1/2c almond flour
1c shredded mozzarella or jack cheese
1 tsp dried basil
1 tsp dried parsley
1 tsp onion powder
1 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
1/2c oil for frying (we use coconut or olive oil)
Optional Breading
1c crushed pork rinds (all pictures are without, as you can see they already have a nice crust, the pork rinds will make it slightly thicker and crisper, so it's up to you)
1. Heat oil in a large skillet on medium high heat. In a large mixing bowl, combine all ingredients, except the oil. Use hands to mix thoroughly.
2. Form patties or meatballs. If your breading them with pork rinds, do that now. Carefully place each piece into the hot oil. Cook on each side for 5-7 minutes or until crisp and brown.
3. Remove from pan and drain on a paper towel to remove any excess oil.
4. Serve with dipping sauce or add them to your favorite low carb bun. Makes twelve 3" patties.
