Chocolate chip cookies are a timeless classic. Like us you may have fond memories of making these cookies with your mother or grandmother. Now that you're on Keto can you still enjoy these treats? Yes! These cookies will take you back in time. Enjoy!
Keto Chocolate Chip Cookies
2T butter, melted
1/3c sweetener (we use Lakanto)
2 egg
2 tsp vanilla extract (we use Grandma's Pure Vanilla)
1/2 tsp baking powder
1/4 tsp salt
1/8 tsp ground cinnamon (check out these cute mini measuring spoons)
2c fine almond flour*
1/2c sugar free chocolate chips (we use semi-sweet by Let's Bake Believe)
1/4c chopped nuts (optional, we like walnuts or pecans)
1. Preheat oven to 325°. In a large mixing bowl, stir together the butter and sweetener. Add eggs and vanilla, stir to combine.
2. Add remaining ingredients and stir until fully incorporated - it will be soft but don't be tempted to add more flour or refrigerate. Add chocolate chips, and nuts if desired, and stir.
3. Use a medium cookie scoop to make uniform balls and space them out on a silicone lined cookie sheet, flatten slightly.
4. Bake for 10-12 minutes, until the tops start to brown. Let them cool completely before serving. Makes 24 cookies.
*NOTE: For a drier, less chewy cookie use 1c almond flour and 1/3c coconut flour.
