Keto Recipe: Chocolate Peanut Squares

That hardly describes the yummy goodness of this particular no-bake treat. You see, in between the peanut coconut layer and the chocolate layer there's also a cream cheese layer. So much yummy goodness in one dessert bar, it's crazy. What's crazier is how long we've been enjoying it. Take a look at that last picture, this recipe is originally from Kraft Foods 1991! And now we can enjoy it ketofied with less than 4 carbs per piece, you're welcome.


Base Layer

  • 1/2c butter

  • 1oz sugar free chocolate (we use Lily's Original bar)

  • 1/4c sweetener (we use Splenda)

  • 2/3c unsweetened shredded coconut (we use Edward & Sons)

  • 1c almond flour

  • 1/3c chopped peanuts

Middle Layer

Topping

  • 3oz sugar free chocolate (we use Lily's Original bar)

  • 1 tsp coconut oil, solid kind

1. Melt butter and 1oz of chocolate in microwave or on stove top. Once melted stir in sweetener until fully dissolved.

2. In a small mixing bowl, combine butter mixture with coconut, almond flour and peanuts. Once mixed, press into parchment lined 8x8 pan, chill for 30 minutes.

3. Mix cream cheese, sweetener and vanilla until well incorporated. Spread evenly over crust.

4. Melt remaining 3oz of chocolate and coconut oil, stir until combined. Spread evenly over cream cheese layer. Chill for 30 minutes, cut into squares. Makes 16-20 squares.
