Remember cowboy cookies? They were chock full of oatmeal, coconut, chocolate chips and nuts? Well, we’ve ketofied them and turned them into blondies. Our favorite combo is milk chocolate chips and walnuts. Change them up with different nuts and baking chips like pecans and butterscotch chips, macadamias and white chocolate chips or almonds and mint chips. Be creative!
Keto Cowboy Blondies
•3/4c butter, softened •1/2c brown sugar sub (we use Swerve) •2 large eggs, room temperature •1 tsp vanilla extract (we use Grandma's Pure Vanilla) •1c fine almond flour •1/2c fine coconut flour (we use Republic of Coconut)
•1/2c granular sweetener (we use Splenda) •1/2c unsweetened shredded coconut (we use Edward and Sons) •1 tsp baking powder •1/8 teaspoon salt (check out these cute mini measuring spoons) •1/8 teaspoon ground cinnamon •1/2c chopped (walnuts, pecans or macadamias) •1/2c sugar free chocolate baking chips (we use Let's Bake Believe) 1. Preheat oven to 350°. In a large mixing bowl, combine the butter, brown sugar substitute, eggs and vanilla. 3. In small mixing bowl, combine flours, baking powder, granular sugar, coconut, nuts, salt and cinnamon; slowly add into the butter/egg mixture. Once combined, add the chocolate chips (batter will be thick). Spread into a greased 7x10 or 8x8 baking dish. 4. Bake until edges start to brown (do not over bake), 18-20 minutes. Cool completely before cutting. Enjoy!
