Sugar Free Cranberry Sauce
1. Place cranberries in a medium saucepan and fill with water, just enough to cover the berries. Bring to a boil and simmer until they burst open, about 15 minutes.
2. Add remaining ingredients and stir until sugar and gelatin have dissolved. Mixture should start to thicken.
3. Remove from heat and blend with an immersion blender (or use a potato masher for a chunkier version). Strain, if desired, and refrigerate. Mixture will continue to thicken as it cools. Yield 3 cups.
*Note: The amount of gelatin powder you need to use depends on how thick you'd like your sauce. Half a packet will keep it quite pourable, good for topping cheesecake, ice cream or mixing into drinks or dips (see pics below: Cranberry Cream Cheese Dip and Cranberry Fizz). Using a whole packet with give you a more jelly like consistency, good for stand alone cranberry sauce.
BONUS RECIPE
Cranberry Fizz
2T cranberry sauce (see picture above)
1 oz vodka (optional)
6 oz sparkling water (we like lemon-lime flavor)
Combine all ingredients and serve over ice. Enjoy
