Keto Recipe: Cranberry White Chocolate Blondies

When we think of fall/winter one of our favorite flavors is cranberry, other than pumpkin of course. We’ve been making gluten free Cranberry Bliss Bars for several years. We found a copycat recipe on Pinterest by tasteofhome.com and swapped out all-purpose flour for an oatmeal/rice flour combo. Now, we’ve ketofied it by using keto friendly sweetener with almond and coconut flour.


This might be our all time favorite Keto dessert now! Hopefully, it will be yours too.

Cranberry White Chocolate Blondies

FROSTING:

  • 4 oz cream cheese, softened

  • 1/4c sweetener (we use Allulose or Splenda)

  • 1 tablespoon grated orange zest, or 4 drops essential oil (we use dōTERRA)

  • 1/4c sf white chocolate baking chips, melted (we use Let's Bake Believe)

  • 1T dried cranberries, chopped

1. Preheat oven to 325°. In a small mixing bowl, melt the butter then stir in the sweetener and mix until creamy.

2. Whisk in the eggs and vanilla.

3. In large mixing bowl, combine together flours, baking powder, salt and cinnamon; stir into butter mixture. Stir in cranberries and white chocolate chips (batter will be thick). Spread into a parchment lined or greased 8x8 pan or two 4x8 pans.

4. Bake 12-15 minutes, or until edges start to brown (do not over bake). Cool completely before topping.

5. For the frosting, beat cream cheese, sweetener and orange zest until smooth. Gradually beat in the melted white chocolate; spread over blondies. Sprinkle with chopped cranberries. Makes 9 large squares or 18 triangles.
