Keto Recipe: Crustless Quiche

If you've never had quiche it's hard to describe. Basically, it's baked eggs but the addition of plenty of fats like butter or ghee gives it a tender and pillowy texture. The addition of cheese only adds to the creaminess. Here's our basic Keto quiche, also perfect for an egg fast (2 eggs, 2 fats, 1oz cheese per serving).

Keto Quiche

  • 8 egg

  • 8T ghee or butter, melted**

  • 2oz cream cheese

  • 2oz shredded cheese (we like Gruyère)

  • s&p to taste

Optional

  • dash of cinnamon or chili powder


1. Preheat oven to 325°. Add eggs, cream cheese and seasonings to blender and mix on high for 1-2 minutes. Stream in the melted butter slowly and continue to mix until fully incorporated.

2. Pour mixture into a greased or parchment lined baking dish or soufflé pan (we used 7" spring form pan). Top with shredded cheese.

3. Bake 40-45 minutes, center will still be jiggly. Check at 30 minutes, if the top is browning too quickly, loosely cover with foil. Let it rest or 10 minute before slicing. Serves 4.


**NOTE: If you're not doing an egg fast or want to reduce the amount of fat per serving, you can decrease the butter to 4 tablespoons but it won't be as dense.


Variations - You've probably heard of Quiche Lorraine which includes chopped bacon and onions but don't dismiss those veggies. Try a spinach, ricotta and mozzarella quiche or broccoli, cheddar and ham quiche. Think about international flavors like chorizo and peppers. Really, anything goes here so get creative. Just place the meat and veggies in the pan first and pour the egg mixture over them, top with cheese and bake. You can also make them in a silicone muffin pan for individual servings (see pictures below).
