Yes, you read that right, Dijon Chicken Soup. It may seem odd but the flavors come together beautifully. Think Chicken Cordon Bleu in soup form and Keto-friendly. Actually, that's where the original recipe came from but of course we tweaked it and made it our own. Enjoy!
Keto Dijon Chicken Soup
32oz chicken broth, low sodium
6-7 small turnips, diced
1 carrots, sliced
3 celery stalks, sliced
1 small onion, diced
1 tsp dried parsley
1 tsp dried thyme
2 tsp Dijon mustard
1/4 tsp black pepper (check out these cute mini measuring spoons)
12oz can chicken breast, drained (or 2 chicken breast cooked and shredded)
1/4c bacon bits (or 4oz diced ham)
1/4c heavy whipping cream
1/2c sour cream
1/2c Swiss cheese, shredded
1. In a large soup pot, combine broth, vegetables, seasoning and meats. Bring to a boil, simmer for 20-30 minutes or until turnips are fork tender. If using a crock-pot, set on high for 4-6 hours.
2. Use a potato masher to break vegetables up a bit, do not purée them. This is optional but it gives the soup a little more thickness.
3. Reduce heat and add remaining ingredients. Simmer on low for 5 minutes. For the crock-pot, add these just before serving. Serves 6
NOTE: Instead of adding the shredded cheese into to the soup, try sprinkling it on top just before serving.
