Keto Magic Bars are, well, magical. Definitely in our top five desserts and now we can enjoy this Keto version without the guilt. There are many recipes for this treat on Pinterest and this is our version, we took the best of all of them and then swapped out Keto friendly ingredients. These are so good, even our non-Keto friends ask for them. Scroll down for our Caramel Magic Bar variation. Enjoy.
Cookie Crust
1c almond flour
1T coconut flour (we use Republic of Coconut)
1/2 tsp baking powder
1/4 tsp salt
1 egg, beaten
2T butter, melted
1. Preheat oven to 300°. In a large bowl, mix almond flour, coconut flour, baking powder and salt.
2. Add beaten egg and combine. Add melted butter, combine well.
3. Press into parchment lined baking pan (8x8 for thick crust, 9x13 for thin crust). Bake for 15-20 minutes until golden brown and remove from oven. Set aside. You may see butter settled on top, don’t worry it will be absorbed as it cools.
2T butter
2 cups heavy whipping cream
1/4c sweetener (we use Splenda)
1 tsp vanilla extract (we use Grandma's Pure Vanilla)
1. Melt butter in wide bottom pot, add sweetener and heavy cream, and bring to a soft boil, stirring often.
2. Stir frequently at a low boil until it reduces by a third and coats the back of spoon (about 20-30 minutes).
3. Remove from heat, add vanilla and mix well. Let sauce cool while preparing the topping.
Top Layer
1c + 1T shredded unsweetened coconut (we use Edward & Sons)
1c chopped pecans (or your favorite nut)
1c sugar free chocolate chips (we use Let's Bake Believe)
1. Increase oven temp to 350°. Combine all ingredients (except 1T shredded coconut) into a small bowl and mix well.
2. Add cooled sauce and combine until everything is thoroughly coated.
3. Pour mixture over crust evenly. Sprinkle remaining 1T of coconut over the top. Bake for 5-7 minutes. Let cool in the fridge until ready to serve. Cut into 9 squares, then in half to make triangles. Makes 18 pieces.
Variations
Caramel Magic Bars
Follow the recipe above for the crust and toppings. Use the following recipe for the caramel sauce. You can turn them Salted Caramel Magic Bars by sprinkling the top with a pinch of salt just after baking.
Keto Caramel Sauce
4T butter
1/2c brown sugar substitute (we use Swerve)
2 cups heavy whipping cream
1 tsp vanilla extract (we use Grandma's Pure Vanilla)
1. On medium heat, melt butter in wide bottom pot and brown it, be careful not to burn it.
2. Add sweetener and bring to a soft boil, stirring often. It takes several minutes for it to combine into a smooth caramel like substance.
2. Add heavy cream. Stir frequently at a low boil until it reduces by half and coats the back of spoon (about 20-30 minutes). It should look and taste like caramel.
3. Remove from heat, add vanilla and mix well. Let sauce cool while preparing the topping.
