Yes, that's a mouthful but how else would you describe these beauties? We took a time tested flavor combination and turned them into Keto blondies. What's a blondie? It's thicker than a cookie with a texture more like a brownie minus the cocoa. Any way you explain them they're delicious.
Keto PB Chocolate Chip Blondies
3/4c butter
1c brown sugar substitute (we used Swerve)
1/2c natural peanut butter (we use Adam's)
2 eggs, beaten
1 tsp vanilla extract (we use Grandma's Pure Vanilla)
1c fine almond flour
1/4c fine coconut flour (we use Republic of Coconut)
1 tsp gelatin powder (we use Knox)
1/4 tsp salt (check out these cute mini measuring spoons)
1 tsp baking powder
1/2c sugar free dark chocolate chips (we use Let's Bake Believe)
1. Preheat oven to 350°. In a small saucepan, melt the butter on medium; turn off heat and whisk in the brown sugar substitute and peanut butter. Cool slightly.
2. In a large mixing bowl, combine eggs and vanilla. Temper the eggs. Slowly whisk the remaining butter mixture into the eggs.
3. In small mixing bowl, combine both flours, gelatin, salt and baking powder; slowly stir into the butter/egg mixture.
4. Once combined, add the chocolate chips (batter will be thick). It's alright if some of the chips begin to melt. Spread into a greased 7x10 or 8x8 pan.
5. Bake until edges start to brown (do not over bake), 15-18 minutes. Cool completely before cutting. Enjoy!
