No need to order take out or get drive-thru with this recipe. A few simple ingredients are all that's needed for some real good comfort food. We make this regularly and its one of our kids favorite's too. Enjoy!
Keto Fried Chicken
2lbs boneless, skinless chicken breast (tenderloins or thighs work well too)
1/2c crushed pork rinds
1/2c Parmesan cheese
1 tsp garlic powder
1/2 tsp paprika
2 tsp salt
1/2 tsp black pepper
Optional
1 tsp Italian seasoning OR
1 tsp chili powder
NOTE: You can dip the chicken in egg first, but we find that about the amount of coating sticks either way so we skip it.
1. Pound chicken flat, about 1/4-1/2' thickness.
2. Heat oil in a large skillet on medium-high. Combine remaining ingredients in a zip bag or large mixing bowl.
3. Toss chicken in mixture until fully coated. gently place chicken in skillet, leaving a few inches of space between them (see picture above). Once brown on one side, flip chicken over and brown the other side. Depending on the thickness, this should take a few minutes per side.
4. Remove from skillet and lay on paper towels to drain any excess oil. Serves 4.
TIP: Change up the flavor profile by using different flavor of pork rinds instead of plain.
