Keto Recipe: Salisbury Steak or Meatballs

We used to make Salisbury Steak all the time pre-Keto, using canned cream of mushroom soup and we'd serve it with mashed potatoes or pasta. Now, we make it from scratch and it tastes even better. Feel free to form the mixture into patties or meatballs. Serve with cauliflower mash or keto pasta (we use Miracle Noodles or zoodles).

Keto Salisbury Steak

  • 1 pound ground beef or turkey

  • 1/2c crushed pork rinds (Pork King Good) or 1/2c grated Parmesan (Kraft)

  • 1 egg, beaten

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • s&p to taste

Mushroom Gravy

  • 2T butter

  • 1c sliced mushrooms (any variety)

  • 1 can beef broth (low sodium, 15oz)

  • 1/2c heavy whipping cream

  • s&p to taste

1. Combine all ingredients for the meat mixture in a mixing bowl and mix by hand. Form into patties or meatballs.

2. In a large skillet on medium-high, brown patties on one side, then flip. Cook for 2-3 minutes on each side.

3. Remove from pan and set aside. Add butter and mushrooms to skillet, season with s&p then sauté for 5 minutes.

4. Add broth and simmer uncovered for another 5 minutes, scraping the pan to loosen drippings.

5. Reduce heat to low, add cream and stir. Add the meat back into the pan and cover. Simmer for 5-10 minutes on each side, allowing the sauce to thicken. Serve over cauli rice or mash, low carb pasta or zoodles. Enjoy!

Makes 4 patties or 20 meatballs


TIP: You can use either crushed pork rinds or Parmesan as the recipe states but you could use both (1/4c each) for even more flavor depth.
