Need a quick recipe for dinner tonight? Here you go - sausage and peppers. This dish comes together in less than 30 minutes and the ingredients are relatively inexpensive. If there's any leftover, it's even better the next day. If you meal prep on the weekends, like many Keto eaters, this is perfect to add to your rotation.
Keto Sausage and Peppers
2 lbs kielbasa or polish sausage, sliced in to 1/4-1/2" coins
1T olive oil
1 yellow pepper, diced
1 orange pepper, diced
2-3 cloves minced garlic
1 small onion, diced
15oz can diced tomatoes, drained
1tsp dried oregano
1 tsp dried basil (for fresh use 1/2c chopped)
s&p to taste
2/3c shredded cheese (we use a cheddar/jack blend)
1. In a large skillet, sauté the onions, peppers, garlic and seasonings in olive oil until translucent. Remove from pan and set aside.
2. Add sausage to pan and brown slightly, stirring occasionally. Add tomatoes and the pepper/onion mixture. Stir to combine and heat through.
3. Two options: Transfer to baking dish and top with shredded cheese and place under the broiler until cheese is bubbly and bron (like the picture below) or keep it in the skillet and top with cheese, cover for a few minutes until cheese melts. Serves 4.
TIP: for a dairy-free version, just omit the cheese and serve.
Note: Change it up by adding other veggies like: cauliflower, zucchini, broccoli or spinach. Just swap one of the peppers for one other vegetable.
