Talk about getting back to basics, you can't get any easier than shake-n-bake chicken, right? With just a few ingredients you can turn plain chicken into a 'finger-licking', 'everyone's asking for seconds' dinner! And that's a win any night of the week. Change up the spices for a completely different flavor (scroll down for a spicy alternate). Enjoy!
Shake and Bake Chicken
4 pounds chicken (leg or thighs are best)
2/3c fine almond flour
1/2c grated Parmesan
1 tsp salt
1 tsp seasoned salt
1 tsp garlic powder
1/2 tsp onion powder
1/4 tsp black pepper
1 tsp Italian seasoning (optional)
1. Preheat oven to 375°. We like to remove the chicken skin, but skin on works too. Mix remaining ingredients in large mixing bowl or zip bag. Coat each piece of chicken thoroughly.
2. Place chicken on a foil lined large baking sheet about a half inch apart (see picture below). We drizzle a little olive oil on the foil to prevent sticking.
3. Bake for 30-40 minutes or until juices run clear. Serves 6-8.
TIP: For a crispy coating, bake 20 minutes then brush with melted butter and return to oven to finish cooking.
Note: These are great in the air fryer too. We have an 8qt Power Air Fryer Oven that has several extra functions like dehydrate, rotisserie, skewers and barrel drum.
Alternates: Instead of Italian season give your chicken a spicy kick with 1/2 tsp cumin and 1/2 chili powder.
