Looking for something out of the ordinary but not too difficult to prepare? This is the perfect side dish for any protein rich meal. Just a few simple ingredients that compliment each other so well. Once you make it, it will be one of your favorites too. See the note at the end for a few alternate serving suggestions. Enjoy!
Keto Spinach Garlic Noodlles
1 package spaghetti konjac noodles (we use Miracle Noodle)
2T butter
3-4 cloves minced garlic
zest of one lemon
2c fresh spinach, stems removed*
dash of ground nutmeg
s&p to taste
2T grated Parmesan
1. Prepare konjac noodles according to package and set aside.
2. In a large skillet, on medium-low heat, melt butter. Add garlic and sauté for 2-3 minutes or until golden brown, be careful not burn it.
3. Turn heat up to medium, add all ingredients into pan, except for Parmesan. Cook until spinach has wilted. Sprinkle Parmesan on top just before plating. Serves 2.
*You can use frozen spinach instead of fresh. Thaw and squeeze out any liquid before adding to the pan.
NOTE: The cheese is one of the main flavor components of this dish. Change it up by topping with different cheeses like Feta, Chevrè or Mizithra. Try it with a sprinkle of red pepper flakes, diced sun-dried tomatoes or roasted red peppers. Make it a meal by adding some leftover chicken while sautéing.
