Keto Recipe: Stuffed Cabbage Rolls

There are so many ways to make stuffed cabbage. Our recipe leans more toward traditional Irish cabbage rolls. Almost every recipe uses a combination of ground meat, spices and rice. To keep it Keto you've got a couple of options - cauliflower rice, crushed pork rinds or grated Parmesan. We opt for equal parts pork rinds and Parmesan, but you add what you like, either way it will come out delicious. These make a great one-pot dinner and can even be made in the crock-pot, but you could also make them smaller and serve as an appetizer. Enjoy!

Keto Cabbage Rolls

  • 1 large head of cabbage

  • 2 pounds ground meat (we use 93% lean beef but a combo works too)

  • 1/2c crushed pork rinds

  • 1/2c grated Parmesan

  • 2 eggs, beaten

  • 1T Worcestershire sauce

  • 1T butter or olive oil

  • 1 small onion, finely chopped

  • 1/2c carrots, finely chopped

  • 3 cloves minced garlic

  • 1T dried parsley

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/8 tsp ground nutmeg

  • 15oz beef broth, low sodium

  • 8oz can tomato sauce

1. Preheat oven to 350°. In a large pot, bring water to a boil and immerse cabbage leaves, cook until slightly tender. Remove from water and drain well.

2. Sauté the onions, carrots and garlic in butter/olive oil for ten minutes or until tender. Remove from heat and set aside.

3. In a large mixing bowl, combine meat, pork rinds, Parmesan, eggs and seasonings. Add in the onions, carrots and garlic, then mix by had like meatloaf.

4. Lay one cabbage leaf flat and place a handful of meat mixture in the center, about 1/2c. Fold over, tucking the edges inside the roll. Place in large baking pan. Repeat until all the meat mixture is used up.

5. In a small mixing bowl combine tomato sauce and broth. Pour over cabbage leaves. Bake 30-40 minutes. If tops browns to quickly, cover with foil. Serves 6.

NOTE: I wasn't paying attention to my recipe and cooked the meat along with the carrots and onions. I blame the headache. It still turned out good, but should be made as directed for best results.
