Layered Jello Fat Bombs

Sometimes you just need a little something sweet and fruity. Try these layered jello fat bombs aka Magic Jello, just add heavy cream and voilà, you have a tasty treat with 1 carb per square. It's the main reason we make them so often. Scroll down for a ring shaped version.

Layered Jello Fat Bombs

Layered Jello

  • 2 boxes sugar free jello* (.6oz, any flavor but our favorite is strawberry)

  • water

  • 1/2 - 1c heavy whipping cream (depends on your taste, pictured with 1c)

  • fresh/frozen fruit (optional)

1. In a bowl, add one package of jello to 2c. boiling water and stir until dissolved.

2. Add 1c ice or cold water and stir until combined (or until ice has melted). Add cut up fruit, if desired.

3. Pour into molds or an 8x8 baking dish. Chill for 15-20 minutes, just until it begins to set (if you wait too long in between the layers won't stick together.)

4. In a bowl, add one package of jello to 1 1/2c. boiling water and stir until completely dissolved. Add 1/2c ice or cold water and stir until combined (or until ice has melted).

5. Add heavy cream and stir until combined. Pour mixture over first layer slowly, preferably over the back of a spoon to prevent denting (see picture below).

6. Chill for 2-4 hours until completely set then slice into squares. Enjoy!

Makes 12 large squares.

Jello Rings

Keto Strawberry Jello Rings

Same ingredients and process as above but for the Strawberry Jello Rings we use the Ultimate Burger Press as individual molds/servings. We’re always looking for ways to use kitchen gadgets in other ways. While we love making donut-shaped burgers with our press, we wondered what else we could do with it. This is strawberry jello with 2 quartered strawberries floating in the top layer and heavy cream added to the second layer. Of course, hubby had to add even more whipped cream to his, which he inhaled!
