You already know that hubby loves lemon, so here's another citrus treat to keep you on track with your Keto eating (only one carb each). We've also made this with orange flavoring, and it's equally as good. These can be frozen for up to a month, so make extra. If you don't like coconut, scroll down for other options. Enjoy!
Lemon Snowball Truffles
4oz cream cheese, softened
2T butter, softened
1T coconut oil
1/2c fine almond flour or unsweetened shredded coconut (we use Edward & Sons)
2T lemon juice or 4 drops lemon oil (we use dōTERRA)
Coating
1/4c unsweetened shredded coconut**(we use Edward & Sons)
OR
1. Combine all ingredients, except coating. Chill for 1-2 hours.
2. Using a small cookie scoop, make 12-14 balls. Lay them on a parchment lined or silicone lined cookie sheet. Use your hands to roll the balls until they are uniform.
3. Roll each ball into the coconut (or granular sugar) and chill for 15 minutes. Store in an airtight container in the fridge for one week or freezer for one month.
**NOTE: If you don't care for coconut, roll them in a granular sugar substitute like Swerve or Lakanto.
