These Peanut Butter Protein Bars were one of the first Keto treats we made and we ate a lot of them. They've got a few more carbs (about 4 per piece) than our usual fat bombs but it's a great treat in moderation (and it’s got way better macros than a store bought pb cup). These are not super sweet, you could add additional powdered sweetener if you like.
Peanut Butter Layer
1/2c unsweetened shredded coconut (we use Edward & Sons)
2c natural peanut butter (we use Adam's)
1/2c sugar free maple or caramel syrup (we use ChocZero)
2-4 scoops (we use 2 scoops of Vital Proteins Collagen Peptides)
Mix all ingredients together and press into a parchment lined 8x8 pan.
Chocolate Layer
3oz sugar free dark chocolate (we use Lily's Original bar)
1tsp coconut oil, solid kind
Melt on low heat or in a double boiler and stir until smooth. Once combined pour over peanut butter layer and smooth out to the edges. Refrigerate for at least 2 hours. Enjoy!
Makes 25 squares.
Note: You could double the ingredients for the chocolate layer (like the picture) but it adds an additional carb per serving.
TIP: If you don't care for coconut, try substituting with hemp hearts or almond flour, adjust macros accordingly.
