Sweet and Salty Fat Bombs

We found a recipe on Pinterest for fat bombs that supposedly tasted like a Butterfinger bar but it did not. Then, we found one that claimed to taste like a Payday, close but not really. Finally, we tweaked a recipe from Instagram and it was closer to a candy bar than anything we've tried so far. It's a cross between the outside of a Payday and a Nature Valley Sweet-n-Salty bar. Try it and tell us what you think.

Sweet and Salty Squares

  • 1 tsp coconut oil (solid kind)

  • 1/2c sugar-free white chocolate chips (we use ChocZero or Let's Bake Believe)

  • 1/2c peanut butter (we use Adam's)

  • 3/4c dry roasted peanuts

1. Melt white chocolate and coconut oil in double boiler or microwave at 30 second intervals until completely melted.

2. Turn heat off and add peanut butter, stir until smooth and creamy.

3. Add peanuts, stir to combine.

4. Spoon into silicone molds and refrigerate or freeze for 4-6 hours, overnight is best. Once hardened, pop out of the molds. Store in an airtight container in the refrigerator for one week or freezer for one month. Keep scrolling for the optional chocolate drizzle for a real candy bar like experience.

Optional Chocolate Drizzle

  • 1/4c sugar-free dark chocolate (we use Lily's Original bar)

  • 1 tsp coconut oil (solid kind)

1. Melt chocolate and coconut oil in double boiler or microwave at 30 second intervals until completely melted.

2. Once the fat bombs have hardened, drizzle topping over fat bombs. Place in freezer for 10-15 to harden the chocolate. Enjoy!



VARIATION: Use almond butter and your favorite nut (walnut, pecan or almonds) for little change.
