Missing your favorite candy bar on Keto? Try this Snickers fat bomb, it's got gooey caramel, crunchy peanuts and creamy chocolate. This will quickly become of your favorites too. Enjoy!
Keto Snickers Fat Bomb
1/4c butter
1/2c brown sugar substitute (we use Swerve)
1c sugar free sweetened condensed milk (see our recipe)
1c sugar-free white chocolate chips
1/2c roasted peanuts, salted or unsalted
Chocolate Coating
3oz sugar-free chocolate (we use Lily's Original)
1 tsp coconut oil
1. In a saucepan on medium heat, combine butter and brown sugar until mixture is syrupy. Add sweetened condensed milk and stir.
2. Once combined, remove from heat and add the white chocolate. Stir until completely melted. Set aside.
3. Place 4-5 peanuts in each mold. Spoon the caramel into silicone molds filling about 3/4 full. Place tray in the fridge while making the coating.
4. In a double-boiler or microwave, melt the chocolate and coconut oil until smooth. Remove from heat. Spoon just enough to cover the tops of each candy. Return the tray to the fridge to firm up. Store in an airtight container in the fridge for one week or freezer for one month. Makes 30-32.
