Strawberry Cheesecake Fat Bombs

This is one of those treats that we keep in our freezer all the time. It's our girls favorite dessert. It comes together quickly with just a few ingredients. Feel free to switch it up with your favorite berry - blueberry, raspberry or blackberry.

Strawberry Cheesecake Fat Bombs

  • 1 1/2 -2c strawberries, if using frozen thaw first

  • 8oz cream cheese, room temp

  • 4T butter, room temp

  • 2-4T coconut oil, solid kind (depends on how much 'fat' you want in your bombs)

  • 1 tsp vanilla extract

  • 1/4-1/2 c sweetener of your choice (we use 1/4c Splenda and it's plenty sweet for our taste)


1. Combine all ingredients in food processor and blend until smooth, scraping the sides occasionally. It's important that everything is at room temperature to get a smooth consistency.

2. Spoon into silicone molds or a parchment lined 9x13 pan. Freeze for at least 6 hours, but overnight is best. Pop out of molds and enjoy. Makes about 30 pieces.
