Keto Recipe: Egg Fast Baked Custard

Traditional baked custard is made with egg yolks, sugar and heavy cream plus whatever flavoring you prefer. This Keto version uses cream cheese to get the desired texture (much like our quiche recipe). It's just sweet enough to satisfy any sweet tooth without sending you into binge mode. Try changing the flavor by using different extracts - vanilla, caramel, cake batter or maple, just to name a few. For an egg fast, each serving counts as 2 eggs and 1oz cheese. Enjoy!

Keto Custard


1. Preheat oven to 325°. Combine all ingredients into blender and mix on high for 1-2 minutes.

2. Grease three 8oz ramekins. Pour mixture evenly into each dish. Place ramekins into a water bath.

3. Bake 40-45 minutes, center will still be jiggly. Turn off oven and let them rest in the oven for 30 minutes before placing in the refrigerator for 4-6 hours. Serves 3.


NOTE: If you're not on an egg fast you can turn these into crème brûlée by sprinkling any granular sugar substitute (like Swerve or Lakanto) on the chilled custard and placing it under the broiler for a few minutes. Be sure to watch it carefully, brown it don't burn it.
