Usually, we make our meaty marina sauce to pour over zoodles. When the mood strikes, only meatballs will do. It's a good thing these meatballs come together quickly with just a few ingredients. You'll notice these are similar to our meatloaf recipe. It's up to you how big or small to make them, but we like them BIG. Enjoy!
Keto Meatballs
2 pounds ground meat (we like 90% ground beef but a combo of pork, turkey or beef works too)
1/2c almond flour (or crushed pork rinds)
2 eggs, beaten
1T Italian seasoning
2 tsp salt
1/2 tsp black pepper
1 tsp garlic powder
Other Ingredients
4c marinara (either homemade or store bought)
1/4c Parmesan, grated (optional topping)
1. Combine all of the meatball ingredients into a large mixing bowl. Mix until fully incorporated.
2. Form mixture into a round balls between 1-2". Makes approximately 40 small or 20 large meatballs.
3. Heat a large skillet on medium-high heat. If your pan is not non-stick, add a little oil. Carefully place meatballs into the hot pan, don't crowd the pan. Let them cook for several minutes then flip. Cover and cook for 10-15 minutes.
4. Drain off any fat and reduce heat to low. Add the marinara sauce, cover and simmer for 30 minutes.
5. Serve over zoodles or low-carb pasta (we like Miracle Noodles) and sprinkle with Parmesan, if desired.
NOTE: Meatballs can be cooked in the oven on a greased half sheet pan at 375° for 20-25 minutes.
